Fig, Banana & Walnut Loaf
This super simple Fig, Banana and Walnut Loaf is the perfect "throw together" for a breakfast or afternoon treat. The great news is, you'll find most of the ingredients in your cupboard already. We have added Figs in Shiraz Syrup to create extra texture and sweetness. It's a great loaf to bring out at morning tea as it's easy to make and your guests will be sure to love it.
Ingredients
- 4 ripe bananas
- ½ cup extra virgin olive oil
- 3 free range eggs
- 1 ¼ cups brown sugar
- 1 ½ cups self raising flour
- ¼ cup Vinofood Figs in Shiraz Syrup coarsely chopped
- ¼ cup syrup from figs jar
- ¼ cup walnuts coarsely chopped
Instructions
- Preheat oven to 180°C.
- Line loaf tin with non-stick baking paper, set aside.
- Place bananas in a large mixing bowl and mash with a fork. Add in oil, eggs, sugar and syrup and mix to combine.
- Add in flour and mix until combined.
- Fold in figs and walnuts into mixture. Pour mixture into loaf tin and bake for 1 hour and 10 minutes, or until cooked when tested with a skewer.
- Allow to stand for 10 minutes then turn onto a wire rack.
- Serve warm with a generous slather of butter, or pour some Shiraz syrup over for a special treat.
