Veggie Burger with Beetroot & Shiraz Relish
These veggie burgers are full of flavour and make a hearty and satisfying lunch or dinner. Adding our Vinofood Indian Tomato & White Wine Sauce to add lots of flavour with our Vinofood Beetroot & Shiraz Relish to top it off. These have to be the best veggie burgers we have tasted! Serve by themselves with a simple garden salad or add a toasted bun and make it a burger.
Ingredients
- 1 onion (diced)
- 1 medium sweet potato (diced)
- 2 garlic cloves
- 2 carrots
- 1 tsp coriander ground
- 1/2 tsp cumin ground
- 150g crushed peanuts
- 100g breadcrumbs
- 400gm tin brown lentils
- 1/4 cup Vinofood Indian Tomato & White Wine Sauce
- 50g chia seeds
- Olive oil
- Salt and pepper
- Vinofood Tomato & Riesling Relish (to serve)
- 4 burger buns (to serve)
- Garden salad (to serve)
Instructions
- Cook and mash the sweet potato. You can either peel and cook on stove in a pot of water or roast in the oven. Just cut in half (lengthways) place on a baking tray line with baking paper and roast in the oven on 200°C for approx 40 mins or until cooked through. Put aside. Once cool enough to handle scoop out the middle, discard the skins and mash.
- While the sweet potato is cooking heat olive oil in a fry pan and gently sauté the other veggies with the cumin and coriander until softened and cooked through.
- Combine the mashed sweet potato and cooked veggie mix into a large bowl.
- Add all the other ingredients and mix together, combining well.
- Add salt and pepper to taste.
- Make into 4 patties and brown on each side in fry pan.
- Cook in oven for 10 minutes on 180°C
- Serve the burger by itself with a garden salad and topped with Vinofood Beetroot & Shiraz Relish or toast a bun and make it a burger.
