Creamy Dijon Chicken
A dinner recipe that everyone can enjoy. Our creamy dijon chicken ticks all the right boxes filled with veggies, herbs and spices and our delicious white wine dijon mustard. With a quick prep time of 15 mins and 30 mins cooking, this meal not only tastes amazing, it's easy to make after a busy day at work.
Prep time 15 min. Cooking time 30 min. Serves 4.
Ingredients
- 1kg boneless chicken thighs, skinless salt and pepper
- 1 tbsp olive oil (plus a generous drizzle for the couscous)
- 200g bacon, diced 150g brown onion, finely diced
- 4 cloves garlic, finely chopped
- 2 tsp dried thyme
- 300ml light thickened cream
- 1 tsp chicken stock powder
- 1 tsp onion powder
- 2 rounded tbsp Vinofood Dijon Mustard
- ¼ cup semi-dried tomato strips
- 100g baby spinach
- 2 cups dry couscous
- 2 tbsp butter
- 1 handful parsley, finely chopped
- ¼ cup Parmesan cheese, finely grated
Method
- Season chicken with salt and pepper.
- In a large frying pan on a high heat fry chicken thighs in olive oil so the outside becomes golden and the inside is almost cooked.
- Set aside on a plate.
- Use the same pan and fry bacon with onions, garlic and thyme until the bacon is golden and the onions are tender.
- Add oil if needed.
- Lower the heat and pour in the cream then stir in stock powder, onion powder and Dijon Mustard.
- Add semi-dried tomatoes and baby spinach.
- Season with salt and pepper then stir through.
- Submerge chicken into the sauce and simmer until the chicken is cooked and the sauce slightly thickens.
- In the meantime, prepare the couscous by boiling 2 cups of water in a saucepan on the stove. Add couscous to the boiling water and stir well.
- Put the lid on and take it off the heat straight away.
- Leave for 10 minutes for the couscous to cook.
- Once cooked take the lid off and keep it off or it will continue to cook.
- Use a fork to fluff it up.
- Season with salt and pepper, butter, olive oil and parsley.
- Stir so the butter melts and all the ingredients are mixed through evenly.
- Serve creamy Dijon chicken with a sprinkle of Parmesan on a bed of couscous.
