Figs & Shiraz Dukkah Chicken
Indulge in the irresistible flavours of our Fig & Shiraz Dukkah Chicken. Imagine tender chicken thighs, their skin perfectly crispy, coated in a fragrant blend of Vinofood Dukkah, offering a slight crispy crunch with every bite. The richness of our figs in Shiraz syrup adds a sweet, wine infused depth that complements the savoury chicken beautifully. Roasted alongside vibrant carrots, tender potatoes and sweet onions, caramelised to perfection, infusing the dish with a natural sweetness and earthy undertones. Serve with fresh spinach adding a touch of vibrant green and a scrip refreshing contrast to the rich flavours.
This recipe serves 4. Prep Time 15mins. Cook time 35-40mins.
Ingredients:
4 chicken thigh cutlets, skin on
½ Jar Dukkah (Nut Free from VinoFood)
½ Jar and Syrup of Figs in Shiraz from VinoFood
3 Large Carrots
4 Potatoes
2 Large Onions
Fresh Herbs, rosemary is good very roughly chopped
Olive Oil, salt pepper
100g Spinach
Instructions:
Heat Oven 180c
Cut Carrots into long thick slices, Potatoes into quarters and Onions into rings.
Chop half the figs in quarters (keep separate)
In a bowl combine half the liquid from Figs in Shiraz Syrup Jar, carrots, potatoes (you can microwave or air fry your potatoes for 5-10 mins before to make sure they cook through) and onions and rosemary and coat well.
Splash bit of olive oil in the bottom of a baking dish and then add veggies.
Place chicken on top. Combine Dukkah with salt and pepper and press into chicken, splash or spray with bit of olive oil.
Bake at 180c for 35-40mins or until chicken cooked.
Add figs in the last 5 minutes in the oven.
Serve straight from the tray with a green salad of your choice.
