Sausage Rolls With Tomato & Riesling Relish
Gourmet sausage rolls made easy with this scrumptious recipe. The perfect snack, lunch or dinner and pair it with our Tomato & Riesling Relish and this might just become a weekly meal. Also great for kids lunch boxes.
Prep time 15 min. Cooking time 25 min. Makes 12.
Ingredients
- 1 tbsp olive oil
- 100g onion, very finely diced
- 100g carrot, finely grated
- 3 large cloves garlic, very finely chopped
- Salt and pepper 500g
- Cumberland pork sausage-meat or similar (high quality from the butcher)
- 1 heaped tbsp fresh parsley, finely chopped
- 1 egg, whisked (egg wash)
- 1 ½ all-butter pastry sheets (25cm x 25cm)
- 2 tbsp black sesame seeds
- Vino Food Tomato and Riesling Relish
Method
- Pre-heat oven to 210 degrees Celsius using top and bottom element mode.Line a tray with baking paper and grease the paper.
- Gently sauté onion, carrot and garlic in olive oil, low and slow until onions become soft and translucent and no liquid is left from the carrots.
- Season with salt and pepper.
- Allow carrot mixture to cool before mixing it into a bowl with sausage-meat and parsley.
- Cut the pastry sheets in half, use a ⅓ of the filling for each of the 3 half sheets of pastry.
- Make a long log on top of one end of the pastry using up about ⅓ of the pastry space.
- Brush the opposite edge of the pastry about ⅓ of the width of the pastry with egg wash.
- Roll the meat in pastry carefully, without stretching it or leaving gaps.
- Gently push along the pastry join to make sure it is sealed. Cut each long sausage roll into 4 portions.
- Brush the top and sides of the pastry with egg wash then sprinkle with sesame seeds.
- Make the rest of the sausage rolls.
- Cook on the middle oven rack for 20 minutes or until golden on the outside and well cooked on the inside.
- Cool on a wire rack.
- Serve with Vinofood Tomato and Riesling Relish.
