Merlot Espresso Tiramisu

Prep time 20 min. Chilling time 2+ hrs. Serves 4.

Ingredients 

  • 250ml whipping cream 
  • 1.5 tsp vanilla bean extract
  • 60g white sugar
  • 250g mascarpone cheese
  • 350ml long black coffee, cold
  • 45ml Vinofood Merlot Espresso Syrup, extra for topping
  • 14 Ladyfingers sponge biscuits
  • small dark chocolate block, grated for topping

Method

  1. Beat whipping cream, vanilla bean extract and white sugar in a large bowl until soft peaks form.
  2. Stir through mascarpone cheese then continue to beat until stiff peaks form, then set aside.
  3. Mix the cold coffee and Vinofood Merlot Espresso Syrup in another large bowl.
  4. Set out 4 dessert bowls.
  5. One by one dunk a sponge biscuit quickly into the liquid for only a moment then make a single layer of them on the bottom of the dessert bowls.
  6. Snap them where needed to make complete layers.
  7. Spoon half the cream mixture on top of the sponge and spread evenly.
  8. Make another layer of the dunked sponge biscuits then use the rest of the cream mixture to coat the top of each dessert bowl.
  9. Grate dark chocolate over the top and refrigerate (air tight) for at least 2 hours.
  10. Leaving it overnight will allow a richer flavour to develop.
  11. Drizzle with lashings of Merlot Espresso Syrup just before serving.
