Rocket, Blue Cheese & Pickled Pear Salad

This delicious rocket, blue cheese & pickled pear salad is a great go to when looking to keep up with your healthy eating, but want to 'throw' something together quickly. Using our Vinofood Semillon Pickled Pears you will be in for a taste sensation. It is the perfect dish on its own or add some poached chicken or eggs for a more substantial meal. A quick and easy meal for everyone to enjoy.

Ingredients

  • 200 gm fresh rocket (arugula)
  • 280 gm Vinofood Semillon Pickled Pears
  • 100 gm blue cheese crumbled (or your favourite feta)
  • 100 gm walnuts
  • 1 red onion
  • 2-4 tbsp Vinofood Balsamic Shiraz Glaze for drizzling


Instructions

  1. Toast walnuts in oven at 130°C for 10 - 15 minutes (check every 5 minutes so they don't burn).
  2. Wash rocket and place in a large mixing bowl.
  3. Drain Semillon Pickled Pears and add to bowl with cheese, walnuts and onion.
  4. Toss through and serve on a plate or bowl.
  5. Drizzle with Balsamic Shiraz Glaze to serve.
