Sparkling Strawberry Jam Drops

Ingredients
- 120 grams butter softened at room temperature
- 1 cup castor sugar
- 1 tsp vanilla extract
- 2 each eggs
- 2½ cups self-raising flour
- ½ cup Vinofood sparkling strawberry jam
Instructions 1.
- Pre-heat oven to 180° and line 2-3 baking trays with baking paper.
- Beat the softened butter, sugar and vanilla together until pale and soft.
- Add the eggs, one at a time until combined and fluffy.
- Add the flour and mix to a soft dough.
- Roll the mixture into balls (around 24-26).
- Place on prepared trays.
- The cookies will spread a little so give them room between each ball.
- Use your thumb to press into the centre of each biscuit to make a well for the jam.
- Add a little jam to each biscuit and bake for 12-15 minutes or until golden and cooked through.
- Remove from oven and let them sit on the tray for 1-2 minutes.
- Transfer to a wire rack to cool completely.
