Rainbow Rice Paper Rolls

Ingredients
- 10 rice paper wraps, 16 cm
- 60g baby cucumber, deseeded, thin batons
- 60g red and/or yellow capsicum, thin batons
- 60g carrot, julienned 60g red cabbage, shredded
- 100g avocado, sliced 20g red onion, finely sliced
- 1 handful fresh parsley or coriander leaves
- 4 tbsp Danish feta, crumbled
- 150g Vinofood Red Pepper, Chilli and Chardonnay Sauce
Method
- Following the directions on the rice paper wrap packaging; rehydrate each wrap one at a time.
- Add a small amount of each of the ingredients (except for the sauce) onto the wrap then roll them as directed.
- Do not over fill wraps as they can tear or split apart.
- Once all rice paper rolls are made then slice them in half and arrange them on a serving dish with the cut end facing upwards.
- Serve with Red Pepper, Chilli and Chardonnay Sauce.
- They make a great addition to a cheese board or grazing table.
