INGREDIENTS:
Beetroot & Shiraz Relish Dip
- 60g Vinofood Beetroot & Shiraz Relish
- 40g tinned beetroot
- 400g tin cannellini beans, drained and rinsed
- 1 Medium clove garlic, roughly chopped
- 40g hulled tahini paste
- Salt and pepper to taste
- 1/2 lemon, juiced
Prosciutto Bites
- 400g large Bosc pears, ripe but not soft
- ½ lemon, juiced 80g blue cheese, small chunks
- 8 slices prosciutto, finely sliced, cut in half longways
- 4 tsp Vinofood Fig, Apple and Chardonnay Chutney
- 5 fresh thyme sprigs
Rainbow Rice Paper Rolls
- 10 rice paper wraps, 16 cm
- 60g baby cucumber, deseeded, thin batons
- 60g red and/or yellow capsicum, thin batons
- 60g carrot, julienned 60g red cabbage, shredded
- 100g avocado, sliced 20g red onion, finely sliced
- 1 handful fresh parsley or coriander leaves
- 4 tbsp Danish feta, crumbled
- 150g Vinofood Red Pepper, Chilli and Chardonnay Sauce

- Vinofood Kalamata Marinated Olives
- Nuts
- 110g jar Vinofood Fig, Apple & Chardonnay Chutney
- 110g jar Vinofood Merlot Wine Jelly
METHOD:
- Beetroot & Shiraz Relish Dip: Combine ingredients into a food processor until smooth consistency.
- Prosciutto Bites: Wrap ripe Bosc pear slices with prosciutto. Top with blue cheese and a drizzle of Vinofood Fig, Apple and Chardonnay Chutney. Garnish with fresh thyme leaves.
- Rainbow Rice Paper Rolls: Soften rice paper wraps. Fill each wrap with ingredients. Roll tightly and serve with Vinofood Red Pepper, Chilli and Chardonnay Sauce for dipping.
ASSEMBLY:
- Arrange the Beetroot & Shiraz Relish Dip, Prosciutto Bites, and Rice Paper Rolls on a serving board. Add camembert or brie cheese, marinated olives, small jars of Fig, Apple & Chardonnay Chutney and Merlot Wine Jelly. Complete the board with a selection of crackers, Kalamata olives, and nuts.
