Smoked Cheddar Rosti With Onion, Thyme & Red Wine Jam

Delight your palate with this simple and delicious smoked cheddar rosti, great served with our Onion, Thyme & Red Wine Jam.

Prep time 15 min. Cooking time 20 min. Makes 6.

Ingredients

  • 600g potatoes, peeled and grated
  • 100g onion, peeled and grated
  • 60g smoked cheddar cheese, grated
  • 2 tbsp fresh dill, finely chopped (extra for garnish)
  • 30g butter, melted Salt and pepper Olive oil
  • Vinofood Onion, Thyme and Red Wine Jam Serving
  • Suggestion- Serve rostis with pan-fried chorizo, avocado, onion jam and dill.

Method

  1. Pre-heat oven to 100 degrees Celsius (to keep rostis warm whilst cooking).
  2. Mix potato and onion together in a bowl, then squeeze out and discard as much fluid as possible.
  3. Add cheese, dill, butter, salt and pepper into the bowl and mix together evenly.
  4. In a large non-stick frying pan heat a couple of tablespoons of olive oil on a medium heat.
  5. Divide the mixture into 6 and spoon out 3 portions onto the pan.
  6. Use a spatula to shape each portion into a round shape and gently push down without flattening it.
  7. Once golden underneath, then flip and cook the other side.
  8. Keep rostis warm in the oven whilst cooking the rest.
  9. Serve as suggested.
