Blinis with Fig, Apple and Chardonnay Chutney

Ingredients
- 1 cup plain flour
- ½ flat tsp salt
- ½ flat tsp baking powder
- 205ml milk
- 1 egg
- 1 tbsp butter, melted
- 1 tbsp olive oil 200g ripe brie or camembert, cut in chunks (use cream cheese for a lighter alternative)
- 150g smoked trout or smoked salmon, cut in pieces
- Vinofood Fig, Apple and Chardonnay Chutney, to garnish each blini
- 1 handful fresh dill, to garnish each blini
Method
- In a bowl gently whisk together flour, salt, baking powder, milk, egg and melted butter until smooth.
- Heat a large non-stick frying pan with olive oil and spread all over the pan.
- On a medium heat, spoon in a tablespoon of batter onto the pan for each blini, cooking about 5-6 at a time.
- Once small bubbles appear and the blini is cooked on the bottom (it will easily come off the pan once ready) then flip it over and lightly cook the other side.
- Place blinis on a cooling rack and continue to cook the rest.
- Once cooled, top with ripe gooey soft cheese, a piece of trout, a small dollop of Vinofood Fig, Apple and Chardonnay Chutney and a sprig of dill.
