Merlot Brisket Slider

Feast on these mouth-watering slow cooked Merlot Barbecue Sauce Brisket Sliders. Infused with spices, these sliders are the perfect entertaining meal or great for family night for everyone to enjoy.

Serves 4.

Ingredients

  • 1 cup hot water
  • 1 tsp beef stock powder
  • 1 heaped tsp onion powder
  • 280ml Vino Food Merlot Barbecue Sauce salt and pepper
  • 1 tbsp olive oil
  • 150g brown onion, finely diced
  • 4 cloves garlic, finely chopped 800g beef brisket, whole piece
  • 4 tbsp whole egg mayonnaise
  • ½ lime, juiced
  • 200g red cabbage, shredded
  • 200g carrot, julienned or grated
  • 80g red onion, finely sliced
  • 8 medium bread rolls
  • 8 serves pickles, sliced chilli or chipotle hot sauce.

Method

  1. Turn the slow cooker on high then pour in hot water.
  2. Stir in beef stock and onion powder.
  3. Add Merlot Barbecue Sauce then stir in salt and pepper.
  4. Heat olive oil in a large non-stick frying pan and gently fry onions and garlic until tender then add to the slow cooker and stir.
  5. Heat up the pan again then quickly sear each side of the brisket for a couple of minutes.
  6. Add the brisket to the slow cooker and try to cover it with as much sauce as possible.
  7. Slow cook for 7 hrs or until the meat comes apart easily.
  8. Use 2 forks to pull the beef apart until it is shredded.
  9. Stir the meat into the sauce so it is thickly and evenly coated.
  10. When ready to serve, make tangy slaw by mixing mayonnaise, lime juice, salt and pepper in a large bowl.
  11. Add in cabbage, carrot and red onion then stir together until the mayonnaise has evenly spread.
  12. Make sliders with a layer of tangy slaw, a generous serve of brisket, pickles and hot sauce.

TIPS -If possible, turn the brisket and keep coating it with sauce a couple of times over the cooking period to keep it moist and flavourful.
