Ingredients
- 400g large Bosc pears, ripe but not soft
- ½ lemon, juiced 80g blue cheese, small chunks
- 8 slices prosciutto, finely sliced, cut in half longways
- 4 tsp Vinofood Fig, Apple and Chardonnay Chutney
- 5 fresh thyme sprigs
Method
- Slice both pears into 8 long wedges and cut out the core.
- Fill a large bowl with cold water and stir in the lemon juice.
- Put the pear pieces into the bowl and leave to soak for a couple of minutes. The acidity from the lemon will prevent the pears from going brown.
- Drain the water and place pears on paper towels so the excess water drips off, then pat dry.
- Place a chunk of blue cheese on a wedge of pear then wrap it with prosciutto.
- Continue the same method for all the pear wedges.
- Arrange the wrapped pears on a serving plate.
- Dollop ¼ teaspoon of Fig, Apple and Chardonnay Chutney on top of each then garnish with thyme.
- Perfect on a grazing board.
